Just another easy and simple dressing to add to the repertoire! This light dressing is just the right amount of acidity and sweetness. I do like mine on the more acidic side, so if you find it too much, add in a bit more olive oil. While I paired this dressing with this salad, it can go on almost anything.
Red Wine Vinegar Dressing

1/4 cup red wine vinegar

1 tablespoon dijon mustard

2 teaspoons honey

1/2 teaspoon sea salt

1/4 cup olive oil
This is a super simple dressing that can be made within 5 minutes. Mix all ingredients together EXCEPT olive oil in a blender. If you can, slowly drizzle in olive oil while it is blending- this helps it emulsify. Store in an airtight container in the fridge for up to a week.
