It was a scorching 90 degree day and I knew just what I wanted. A creamsicle. Refreshing citrus + luscious, melt-in-your-mouth ice cream.
Albeit not on a popsicle stick, like I used to always have as kid, this smoothie brought me immediately back to my childhood. And since it’s all in smoothie form, you don’t have to strategically plan if you’re going to eat the creamy vanilla inside or the orange outside layer first, like I always did as a kid (okay, “strategically plan” may be a bit overboard, but hey, these are hard decisions).
Perhaps the best part of this recipe is that you can just throw everything into a blender, and bzzzz….you’re done!
Peach Creamsicle Smoothie
- 4-5 frozen peach slices
- 3/4 cup almond milk or skim milk
- 2 tablespoons full fat coconut milk (if you want it to be super creamy, add more in place of the almond milk)
- 1/4 cup silken tofu or additional coconut milk
- sweetener of your choice (I used one packet of stevia; if you want to use honey or agave, I recommend doing about 1 teaspoon)
