This is a refreshing, creamy ice cream that has a fairly mellow watermelon flavor. Sometimes I find watermelon sharply sweet- coconut milk balances out the sweetness of the watermelon a bit while still feeling indulgent. I love the addition of the mint and lime because they brighten this dish and add a depth of flavor.
Creamy Watermelon Mojito Ice Cream

1/2 cup freshly juiced watermelon

1 can full fat coconut milk

2-4 honey tablespoons of honey, depending on how sweet you want it! taste as you add- You could also try 1/2 frozen banana for sweetness with honey

1/4 teaspoon sea salt

zest and juice of 1/2 lime

handful of fresh mint
Blend all ingredients in a blender. Put in ice cream maker according to directions. Serve with a spring of fresh mint.
