While this recipe has been posted for a while under another one (see here), I finally decided that I use this “barely a recipe” so many times, that it deserves its own post. I refer to it so many times and its often times my go-to for a nutritious side dish. You can also use parsnips for a fun twist. Super yummy!
Oven Roasted Carrot Fries
- 5 large carrots
- 1/2 to 1 tablespoon extra virgin olive oil
- 1/2 teaspoon sea salt
Preheat oven to 425. Cut carrots into 1/2” wide matchsticks. Toss carrots in olive oil and sea salt and spread out onto a baking pan. Put in oven until carrots are starting to brown and are slightly crispy, about 30-40 minutes.
Serve with any sauce you choose- I personally like pesto or ketchup. To round out a meal, check out these falafels that I’ve served them with before.
