Super Easy Pico De Gallo

This is my go to whenever I make anything Mexican- whether it be tacos, a bowl/salad, grilling, etc. I love it because it’s an easy and flavorful way to add in a ton of veggies.
You can also easily sub in different ingredients to switch it up or use what you have on hand. Add in mango, pineapple, different colored tomatoes, different peppers, avocado, different spices.

And don’t go light on this! The more, the merrier considering it’s all veggies 🙂

Super Easy Pico De Gallo

  • 2 tomatoes, diced (or a pint of baby tomatoes)

  • 1 red, green, or yellow pepper, diced

  • 1/2 small red onion, diced

  • small bunch fresh herbs like basil or cilantro (or even mint for a twist!), chopped finely

  • generous pinch sea salt (about 1/2 teaspoon worth)

  • 1-2 limes, juiced (taste as you go)

  • optional add ins (I would chose one):

    • 1 avocado, diced

    • 1 mango, diced

    • 1/4 cup diced pineapple

    • 1 cucumber, diced

    • additional pepper, diced

    • jalapeno, diced

Mix all ingredients to combine. Serve immediately. I’ve served this with fish tacos, grilled fish, a burrito bowl, or even a salad. Store in an airtight container for up to two days.
