Super Easy Shredded Taco Chicken

This is the perfect recipe when you’re looking for something super simple and easy, yet it doesn’t taste bland or boring. 3 ingredients, 1 pan, under 30 minutes, and easy clean up. It doesn’t get better than that. I like to mix this in when I do other recipes that may require a few more components or time; it’s an easy “staple” in a way that I know it’s fairly versatile and can be added to any meal for some extra protein.

Super Easy Shredded Taco Chicken
Serves 5-6

  • 1/2 packet of taco seasoning (I used Trader Joe’s)

  • 1 tablespoon extra virgin olive oil

  • 1.5 pounds chicken breast

In a bowl or large ziploc bag (I like using that for easy storage and clean up), toss in chicken, seasoning, and olive oil. Mix thoroughly so seasoning is covering the chicken completely. Marinate overnight, or at least for a couple of hours.

Preheat oven to 400. Oil a baking sheet and place chicken on top of baking sheet. Bake chicken for about 25 minutes- it depends a bit on the thickness for how long. If you’re using very thin breasts, it will probably be between 20-25 minutes, whereas if the chicken is very large/thick, it make take closer to 25-30 minutes. I used a meat thermometer to check the thickest part of the chicken to see that it registered at 165, and found that it took longer than normal because the chicken was so thick.

Let chicken cool, and then shred with your fingers or a fork.
