This simple salad is perfect for refreshing lunch on this hot (and muggy- ugh!) day. I’m loving the pop of flavor from fresh orange juice & zest and that crisp, cold bite of cucumber and watermelon with the creamy avocado. Oh and the color and vibrance from these edible flowers.
#NoWaste Infused Water: Inspired by some recent posts, I tossed all my leftover watermelon, orange, & cucumber scraps in about a big jar with 8 cups of water & ice. Hello, amazingly easy infused spa water! I was a bit skeptical about the flavor but it was great. It’s a perfect way to use every last scrap.
Watermelon, Avocado, & Cucumber Salad with Orange Vinaigrette
Makes 2 large servings or 4 smaller servings

1/4 small watermelon, diced

1 avocado, diced

1 cucumber, diced

1 handful of mint, chopped

4 small handfuls of arugula or other mixed green of your choice

sea salt, to taste

edible flowers and orange zest (optional for a pop!)

easy orange vinaigrette (see here)
Toss arugula in orange vinaigrette and season with sea salt and pepper. Place in bowl/plate. Top with avocado, cucumber, watermelon, and mint. Sprinkle with a bit of sea salt and orange vinaigrette. Top with flowers and orange zest if using.
No Waste Watermelon Infused Water

Place all leftover scraps in a large jar with water and ice. Place in fridge for an hour before drinking- it’s best cold! I think this is most flavorful the day of. Drink up!
