Slow Cooker Spiced Chicken

To me, the best thing about slow cooker recipes is that it’s super minimal prep. You throw everything in, wait 8 hours, and you have a delicious meal waiting for you, right? Well often times slow cooker recipes require more prep before- browning meats, sautéing veggies, etc. To me, this just negates the whole reason for the slow cooker!

This recipe embraces the idea of the slow cooker whole-heartedly. Literally, you toss in all the ingredients, and just wait. You don’t even have to cut/prep the chicken, because you can sift through the pieces when shredding. 

Slow Cooker Spiced Chicken
The flavors are mostly North African, with a bit of a Mexican kick from the green chiles. If you don’t have Berbere spice, try a mix of paprika and BBQ seasoning. It’ll be a bit different, but still delicious. Also, if you’re skeptical about the raisins, try them out! They soak up the tomato sauce and rehydrate, adding a different texture and slight sweetness to the mix.

  • 1 15-oz can tomato sauce
  • 1 tablespoon Berbere spice
  • 1 teaspoon cumin
  • 1/2 teaspoon sea salt
  • 2 pounds chicken breast
  • 1 4-oz can diced green chile peppers
  • 1/4 cup raisins

Place all ingredients in slow cooker, and toss chicken so it is coated in sauce. Cook on low for 8 hours. Pull chicken out, let cool slightly, then shred and add back into sauce. Toss. Serve immediately or store.

Serve with brown rice, and sauteed carrots and spinach for a full meal.
