Spring Salad with Asparagus, Fava Beans, Strawberries & Feta

I hadn’t planned on making this salad, but when I got to the market and saw fresh fava beans and asparagus, I knew I had to make a super fresh, crisp salad to highlight these two finds! Fava beans require a bit of work and patience to prep, but it’s worth trying at least once 🙂

Spring Salad with Asparagus, Fava Beans, Strawberries & Feta
Makes 4 small servings

  • 1 bunch asparagus, trimmed

  • 1 pint fava beans

  • 5 ounces arugula

  • 1 zucchini, diced

  • 1/2 cup strawberries, sliced

  • 2 ounces feta, crumbled or diced

  • small handful of mint

  • white balsamic vinaigrette (see recipe here)

  • sea salt and black pepper, to taste

While this salad doesn’t require too much prep, you do need to blanch the fava beans and asparagus before assembling. For the fava beans, remove the beans from the pod. Place in boiling water for 2 minutes and then immediately place in an ice bath or under cool running water to cool. Once cool, remove the beans from their shell. For the asparagus, place in boiling water for 3 minutes and them immediately place in an ice bath or under cool running water. The asparagus should be bright green but still have a crunch to it. Then chop asparagus to bite size pieces.

Place all ingredients together, toss, and serve.
