“Guacamole Greens” with Avocado, Tomato & Tortilla Chips

Not sure what to eat for lunch? Make this easy guacamole and chips inspired salad that is full of greens and flavor (inspired by sweetgreen). Tempted to remove the tortilla chips to be healthier? Seriously don’t. You can have even just a few chips here to make a HUGE difference in adding the right crunch and saltiness needed. You can easily change the ratio of ingredients to what you like (and don’t).

While I tried to make this a recipe that you could realistically make the day of since it’s a bit quick, here’s some meal prep tips: Dice vegetables and making the dressing on a Sunday. The tomatoes, cucumber, and red onion can go together in an airtight container, but don’t mix the avocado, cilantro, and tortilla chips until right before eating to keep things fresh.

Summer Taco Salad with Avocado, Tomato & Tortilla Chips
Serves 1

2 cups greens of your choice- I love butter lettuce but use whatever I have on hand.
1/3 cup halved baby tomatoes (or any tomato works!)
1/4 cup diced cucumber- not as essential but I like the refreshing crunch!
1/3 avocado, diced
2 tablespoons diced red onion
4 ounces grilled chicken or protein of your choice (optional)
Handful of cilantro
Handful of tortilla chips of your choice- crumble with your hands.

Mix the greens, tomatoes, cucumber, red onion, avocado, chicken, and cilantro together in a bowl. Add in vinaigrette and toss to thoroughly coat. Top with tortilla chips.

Easy Lime Vinaigrette
1 tablespoon extra virgin olive oil
1 tablespoon lime juice
Sea salt and pepper
Quick squeeze of honey (~1/4 tsp)

Mix all ingredients thoroughly- use a blender or a fork to whisk!
