Barely a Recipe: Grilled Zucchini, Feta, & Mint

This is more just a great combination of ingredients than a recipe. Take the quantities with a grain of salt here- you can easily add more or less of any ingredient based on what you like. Grilled zucchini and summer squash is one of my favorite things to make during the summer; adding in elements of fat, crunch, and acid make this an easy and crowd pleasing side dish that looks more impressive than it is.

Grilled Zucchini, Feta, & Mint
Serves 4-6

  • 2 summer squash or zucchini, sliced thinly lengthwise

  • 2-4 ounces feta (depending on how much you like feta!), crumbled

  • 1/4 cup pine nuts or walnuts, toasted*

  • small handful of mint, julienned

  • 1/2 red onion, sliced

  • 1 tablespoon or so high quality extra virgin olive oil

  • juice of 1-2 lemons

  • 1 tablespoon lemon zest

  • sea salt and pepper, to taste

Not too much in terms of directions here. Grill zucchini and summer squash until they are slightly wilted and have nice char marks. Place them on a large serving platter. Top with feta, pine nuts/walnuts, red onion, and mint and toss very lightly. Drizzle juice of fresh lemons, lemon zest, and about a tablespoon or so of olive oil on top. Season with salt and pepper before serving.
