Golden Graham S’mores Blondie Cookie Skillet

A bit of a nod to my childhood, this cookie skillet is seriously loaded: chocolate chip cookies, peanut butter, Golden Grahams, and marshmallows. Classic with a twist.

Generally this isn’t the type of dessert I gravitate toward- but there’s a time and place for something like this and since I was participating in this cookie skillet collab by @plate_and_pen and @cooking_with_wine, I decided to take the opportunity to make the ultimate cookie skillet. 

A few notes on this:

  1. During my recipe testing, I made a conscious effort to make this simple and straightforward. Minimal equipment, bowls, etc. Within 15 minutes you’ll be able to pop this in the oven to do its magic.
  2. Like I say with my favorite cookies, the toppings can really be whatever you’d like. Marshmallows are a crowd pleaser, but as far as the others, you do you! Golden Grahams were one of my favorite cereals as a kid, but I can think of a lot of other things to add here too.
  3. If you’re looking for a smaller dessert, this can easily be halved and placed in a 6’’ skillet or cake pan. Reduce baking time by about 5-10 minutes.

Golden Graham S’mores Blondie Cookie Skillet

  • 1/2 cup butter, (113g)
  • 1/2 cup creamy no-stir peanut butter
  • 1/2 cup white sugar, (99g)
  • 1/4 cup brown sugar, (50g)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup all purpose flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips

Topping:

  • 1/2 cup chocolate chips
  • 1/2 cup mini marshmallows
  • 1/2 cup Golden Grahams
  • Preheat oven to 350.
  • Place butter in a large microwave proof bowl. Heat butter for about 15 seconds, until melted fully. Let sit for a few minutes to cool slightly.
  • Add in sugar and peanut butter into bowl. Whisk until combined.
  • Add in eggs and vanilla extract and whisk.
  • In a separate medium bowl, whisk all dry ingredients (flour, cinnamon, baking soda, baking powder, salt).
  • Pour dry ingredients into wet ingredients. Mix well with a spatula. Pour in chocolate chips and mix.
  • Butter a 9’’ cast iron skillet. Pour into cast iron skillet.
  • Sprinkle top with chocolate chips, marshmallows and Golden Grahams. If you want them to be more uniform, combine all 3 in a small bowl and then pour over.
  • Bake for 25-30 minutes- set around edges, slightly gooey in middle. Let cool slightly before serving.
