Nachos for dinner? Yes please. Here’s one that you can feel good about because it’s loaded with protein and vegetables and avoids excess carbs and fat. Bonus: you can make in under 30 minutes so it actually can be a weeknight meal.

It doesn’t look like it, but this skillet has a pound of ground bison, several carrots, a whole bag of spinach, and two cups tomatoes. Add black beans for fiber and @sietefoods tortilla chips on top to make grain free. The great thing about this recipe is you can also easily adjust it to what you have on hand. I’ve done this with a jar of salsa instead of crushed tomatoes, without the green chiles, refried black beans instead of regular ones, or with different vegetables. Every time it still worked out!

Healthyish Skillet Nachos
Serves 4-6

  • 1 tablespoon olive oil

  • 1 yellow or white onion, diced

  • 1 teaspoon cumin

  • 2 teaspoons chili powder

  • 2 teaspoons minced garlic

  • 1 pound lean ground beef

  • 1 28 ounce can crushed tomatoes

  • 1 4 ounce can diced green chiles

  • 2 carrots, diced

  • 1 16 ounce can black beans, drained and rinsed

  • 6 ounces baby spinach (a few large handfuls)

  • 1/2 cup shredded Mexican cheese (or more if you want it to be super cheesy!)

  • 2 cups tortilla chips

Directions:

  1. Preheat oven to 375.

  2. Heat a large oven-proof skillet over low to medium heat. Add olive oil to coat the bottom of the pan. Once hot, add in onion and saute until lightly brown, about 5 minutes.

  3. Add in spices (cumin, chili powder, garlic) and saute additional minute. Add in ground beef and saute, stirring occasionally, until is lightly browned.

  4. Add in tomatoes, green chiles, carrots, and black beans. Bring mixture to high heat until it is rapidly bubbling, and then reduce heat down to a simmer. Simmer until meat is cooked through and mixture has thickened up so there is no liquid.

  5. Add in spinach and cover to steam spinach until it is wilted, about two minutes. Stir in spinach.

  6. Place tortilla chips on top of mixture and then top with cheese. Place in oven until cheese has melted, about 5 minutes. If you want to brown the cheese lightly, broil for a minute or two at the end.

  7. Serve immediately. If having this for leftovers, I recommend using new chips and more cheese, but the rest is great as leftovers!
