Avocado & Citrus Salad with Spiralized Beets & Pomegranate Seeds

We often think of winter salads as those with hearty vegetables, kale, and grains. And while I’m all about that, it doesn’t always have to be only warm and cozy flavors. This citrus salad highlights bright and light flavors, while still feeling like winter. The greens and beets are local, and while the oranges & pomegranates aren’t local, this is their peak season.

So get your greens and veggies in with this bright winter salad! A few key points…

  • Pomegranates and oranges are the star here. Their sweet acidity makes this salad stand out.

  • Avocados balance out the pomegranates and oranges and also add healthy fats.

  • Spiralizing beets gives them a new texture and makes them tender enough to eat raw. You could also slice them very thin if you don’t have a spiralizer or omit them.

Winter Citrus Salad with Spiralized Beets & Pomegranate Seeds
Serves about 4

  • 3 small oranges (I’ve been loving both blood oranges and cara cara oranges), peeled and sliced in circles

  • 2 avocados, thinly sliced

  • 2 small beets (I used one golden and one red), peeled and spiralized

  • seeds of 1/2 pomegranate

  • 8 cups of greens of your choice (I love both butter lettuce as well as spicier mixed greens for this)

  • dressing of your choice

Toss greens in dressing of your choice. Add in oranges, avocado, spiralized beets, & pomegranate. Serve! If making this for meal prep/lunches for the week, prep everything in separate containers and then combine the day of (see my pic of that below).
