I’m a huge fan of fruit/cheese/nut salads. It’s an unbeatable combination that almost everyone loves- the nuts and cheese give a heartiness and texture to the salad, and the fruit adds a little tangy sweetness to an otherwise boring salad. Here’s one combination I tried, after discovering tasting some plums at the farmer’s market that were heavenly!
Plum & Blue Cheese Salad with Pepitas
Serves 4
- 3 plums, sliced into small wedges
- 3-4 ounces blue cheese*
- mesclun or mixed greens of your choice
- 1/3 cup toasted pumpkin seeds
- balsamic dressing (see here for mine)
