A perfect beverage for any type of summer occasion, this can be dressed up for an elegant party, or dressed down for a casual BBQ. The one thing I cannot stress enough: USE FRESH LEMONS AND LIMES!! You just really can’t take the shortcut here. It will not taste as good. I promise. I tried the shortcut myself, and immediately could tell it was a mistake.

Other than that, this is an easy recipe to do variations off of and have fun with. I liked the drink a bit on the sour/refreshing side, and so personally didn’t add sugar. But if you want it on the sweeter/more traditional lemonade side, add regular sugar/honey. I tried out regular sugar, and it worked great.

Watermelon Lemonade Slushi
This is very much a drink that you should taste as you go along. My recommendation? Blend everything together, except for the ice. Then taste–the flavors will be muted a lot as you add ice, so remember that the flavor should be more intense/sharp before you add ice, or it’ll be too mellow.

If you’re making for a party, blend everything except for the ice beforehand. Then add ice on the spot.

Makes 8-10 small glasses

4 cups chopped watermelon
juice of 3-ish lemons (scant 1/2 cup) (seriously. this has to be fresh.)
juice of 1 lemon (about 1/8 cup)
1 cup coconut milk
1/4 teaspoon sea salt
sugar or honey, to taste
three large handfuls of crushed ice

Blend watermelon, lemon juice, lime juice, coconut milk, and sugar in a blender or vitamix until completely smooth. Taste, then adjust sugar as needed. Once the flavor is to your liking, add in ice.
