Another quick salad I whipped up in just a few minutes, but is so satisfying, tasty, and beautiful you’ll think you ordered it at a restaurant. This salad has all the elements you need- the crunch, the creaminess, the sweet, the tart, the slightly bitter and leafy green, all tossed in a light vinaigrette.
Blackberry, Peach, & Burrata Salad with Crispy Prosciutto
Serves 1

2 slices prosciutto

2-3 large handfuls of greens of your choice- I did a mixture of greens I found at the farmers’ market

1/4 cup blackberries

1/2 nectarine or peach, diced

2-4 ounces burrata, depending on how much you love it 🙂

white balsamic vinaigrette (see recipe here)
Place prosciutto on paper towel and microwave on 70% power for 45 seconds. It should be slightly crisp at this point. If not, repeat in 20 second increments until crispy.
Toss greens in vinaigrette and season with salt and pepper. Add in blackberries and peach and toss lightly. Top with burrata and prosciutto.
