Generally, the dishes I make the most often are easy, simple, and only have a few ingredients. This is one of those recipes- just two main ingredients and a simple toss in oil, it’s a great side dish for any night (and also as leftovers- just microwave!)
Roasted Green Beans with Parmesan
- 1 pound green beans, trimmed
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon sea salt
- freshly grated parmesan, to taste (I used about 2-3 tablespoons)
Preheat oven to 450. Toss green beans in olive oil and sea salt. Place on a baking sheet, and sprinkle over parmesan. Place in oven until green beans are just starting to shrivel, about 15-20 minutes. Be sure to check after 10, because overcooked green beans are very sad looking! It’s better to err on the side of caution.
