5-Minute Goji Berry Chocolate

Smooth, velvety and with a hint of crunch from the goji berry, these chocolate coins are the perfect weeknight dessert after dinner. They take five minutes to make, and about 30 minutes to freeze. If you aren’t a fan of dark chocolate, these may take some getting used to. Because they are so minimally processed, you can really taste the cocoa and coconut oil. Make sure to buy high quality powder, oil, and honey for the best taste.

If you’ve never tried goji berries, now’s the time to try! Not only do they add a bright color, but they also have an unique sweet flavor that complements the chocolate perfectly. When the chocolate is frozen, the goji berries get slightly crunchy which also adds great texture. You can find them at a good number of grocery stores (Whole Foods definitely has them) in the dried fruit section.

The only problem is here making them last longer than 2 days because they are just too easy and deliious to eat!

Goji Berry Chocolate Coins
Makes 6 large coins

  • 1/4 cup coconut oil, melted
  • 2 tablespoons honey (to taste)
  • 1/4 cup unsweetened cocoa powder
  • 1 tablespoon pureed banana (from baby food aisle)
  • small handful goji berries

Mix coconut oil, honey, cocoa powder, and banana. Stir well. Add in goji berries and stir again. Pour into a mold of your choice. I used a muffin tin (make sure to spray oil before adding in the chocolate). Put in freezer until it hardens and you’re ready to eat.
