Stonefruit Cobbler

There are so many peaches and nectarines at the farmer’s market that I keep buying them, and realizing I have WAY too many in my fridge. While I love eating them plain, this is a fun way to make a topping on top of greek yogurt for a treat.

Stone Fruit Cobbler
Adapted from Elana’s Pantry

  • 4 peaches, nectarines, or plums sliced

  • 1 tablespoon cornstarch or arrowroot

  • 1/2 cup almond flour (55g)

  • 1/4 cup oat flour, spelt flour, or AP flour (I used spelt- 30g)

  • 1/4 cup rolled oats (35g)

  • 1/4 teaspoon celtic sea salt

  • 2 tablespoons melted coconut oil or butter

  • 1 tablespoon honey or maple syrup

  • 4 cups greek yogurt (plain, nonfat)

Preheat oven to 350. Toss peaches, blackberries, and cornstarch in a 8×8 baking dish. Set aside.

Combine flours, oats, sea salt, oils, and syrup in large bowl and stir to combine. Crumble over peaches and blackberries. Cover pan with tin foil and bake for 45 minutes. Fruit should be bubbling.

Uncover and bake for an additional 10-15 minutes, until topping is lightly brown.
