Oven Roasted Jicama Fries

Jicama Fries- Say WHAT?! I think I may be watching too much of “This is Us” because I imagine saying that in the same tone as the Manny. Ahhh, solid show. And I cry every time. OKAY. Anyway. I saw this idea on Emily Schromm’s instagram story one day, and immediately thought- wait WHAT?! You can do this with jicama? What a brilliant idea. I will admit, I was a bit skeptical, because jicama holds a lot of water content. The trick to this is using paper towels or a kitchen towel to get out as much water as possible from the jicama so it browns better.

If you are a bit of a picky eater with vegetables, or want to mix things up, this is a perfect way to do it. Especially if you have kids (or still feel like one yourself), making these look a bit like fries immediately makes them more appealing. If this is your first time doing a recipe like this, I’d suggest doing my carrot fries first. Maybe I’m biased, but I think they are a bit better because they have a slight sweetness to them, and the texture is more familiar.

A couple of nice things about the jicama: 1. You can generally buy it in sticks already, so your prep is SUPER easy. You don’t even have to get a knife out. Major win. 2. It has a different texture, and is most likely a vegetable you don’t eat very often, so it adds some variety. Another win.

Oven Roasted Jicama Fries
Serves 2 hungry people, or 4 people as a side

  • 1 box jicama sticks
  • 1.5 teaspoons of Old Bay Seasoning or BBQ Seasoning
  • sea salt, to taste
  • 1 tablespoon extra virgin olive oil

Preheat oven to 450. Place jicama sticks in a bowl. Begin to remove any excess water from the jicama with a towel. I used about 3 paper towels to do this- at first i just dabbed the paper towels on the jicama, and then once they were dry, I began to gently squeeze the jicama to remove some of the water inside it.

Once the jicama is dry, add in seasoning, salt, and oil. Toss to evenly coat the oil and seasoning. Spread jicama onto a baking sheet lined with parchment paper or foil (spray with oil to prevent sticking). Place in oven for 15 minutes, and then flip the jicama over (the bottom that was touching the pan should be brown). Place in oven for additional 5 minutes and then serve immediately.
