Mango and Radish, Avocado & Falafel Sandwich

I’m not the biggest sandwich person, but when I do go that route.. it’s generally vegetarian and full of veggies. Sandwiches also a great way to repurpose leftovers, which is how this “recipe” came about. This mango radish slaw has made an almost permanent spot in my fridge because I love it so much. Then I had some leftover baguette from my French Onion soup and I just thought of a Bahn mi style sandwich. While the final product is nothing like the traditional, it inspired my combo of the baguette and pickled crunchy veggies. Lots of creamy avocado was a must, and the falafel (which I happened to have leftover) makes this a more substantial vegetarian lunch.

Mango and Radish, Avocado & Falafel Sandwich
Difficulty Level: 3 (because of the falafel- they require a food processor and take just a bit of time)
Time: 60 minutes

  • 2-3 falafel balls- see recipe here

  • mango radish slaw- see recipe here

  • 1 avocado, sliced

  • handful of sprouts

  • baguette or sandwich bread of your choice

Directions: Not too much to say here but…

  1. Make the falafel (can be done ahead of time). See my recipe here.

  2. Make the mango radish slaw (can also be done ahead of time!). See recipe here.

  3. Assemble sandwich, starting with the avocado, followed by the slaw and sprouts, and the falafel. Eat immediately!
